Dried vegetables are a convenient way to add color and flavor to a variety of foods. Easily rehydrated in warm water, these products are nice to have around when you need a veggie but not the hassle of storing and preparing the fresh version. Shallots may be used without rehydrating. Sprinkle on salads, in soups and stews or to add crunch to sandwich fillings. An interesting substitute for onions.
