Cinnamon, Whole Ceylon
Ceylon cinnamon, also known as true cinnamon, is harvested in Sri Lanka. It differs from Indonesian "Korintje" cinnamon by having a sweeter, less hot flavor. The sticks are also much softer than standard cinnamon. Ceylon cinnamon is easily powdered in a spice mill or mortar & pestle. Use in place of regular cinnamon for a sweeter, milder flavor. Please note: due to the soft, almost papery nature of Ceylon cinnamon sticks, they are not recommended for use whole in drinks or crafts). Korintji cinnamon is a better choice for these applications.
