Sour salt, or otherwise known as citric acid, is very strong and used to an acidic or sour taste when cooking foods. Sour Salt must be uses sparingly to avoid an overwhelming sourness. Citric acid adds a sour tang to vegetables, pickles, and some Middle Eastern cuisines. It can be used in the place of fresh lemon juice in some recipes, as well as, to caramels to prevent sucrose crystallization. Wonderful product to have in the kitchen!
