Pepper is produced in Southeast India. Ripe pepper is allowed to ferment and dry, producing black pepper. Dried unripe berries are green peppercorns. White pepper is black pepper that has been soaked, the black outer husks removed. Pepper is perhaps the most versatile spice available.
