Chicken Curry Casserole
Ingredients:

6 Chicken Breast, skinless

2 tablespoon Curry Powder

1/2 Rib Celery

1 cup Dry white wine

2 6-ounce boxes of long grain and wild rice

1 lb Fresh mushrooms, sliced

4 tablespoon Butter or margarine

1 10 3/4-ounce Can cream of mushroom soup

1 cup Sour cream
Directions:Preheat oven to 350 degrees. Cook chicken with curry, celery, wine and water to cover half way for 1 hour. Drain and save liquid. Chop chicken into small cubes. Cook rice in leftover liquid according to package instructions. Saute mushrooms in butter. Combine cooked rice, chicken, soup, mushrooms and sour cream in two quart casserole dishes. Bake covered for 45 minutes. uncover and bake additional 15 minutes.
