Basamti Rice Salad with Peas
Ingredients:

2 1/4 cup Water

1/2 teaspoon Sea Salt

1 1/2 cup Basamti Rice, uncooked

1 10-ounce box frozen baby peas, defrosted

1/4 cup Sliced green onions with some green tops

1 tablespoon Dill Weed

1/2 cup Mayonnaise

2 teaspoon Onion Powder

1 tablespoon White vinegar

salt
Directions:Bring water and salt to boil. Rinse rice in strainer and add to water. Reduce heat to low; cover and cook until water is absorbed and rice is tender, about 20 minutes. Remove from heat and let stand for 5 minutes. Fluff with fork and let cool. Mix peas, green onions, dill, mayonnaise, onion powder and vinegar with rice. Add salt and pepper to taste. Serve chilled or at room temperature on platter garnished with greens.
