Roasted Vegetable Marinara
Ingredients:

1 Red bell pepper, cut into strips

1 Yellow bell pepper, cut into strips

1 Large onion, diced

1 Large portobella mushroom, diced

1/2 teaspoon Black pepper

1/4 cup Olive Oil

3 teaspoon Garlic, minced

1 Spices Vidalia Onion Marinara

1/4 cup Fresh basil, oregano and thyme

1 lb Penne pasta, cooked

1 cup Parmesan cheese, grated

1/2 teaspoon salt
Directions:Preheat oven to 425 degrees. Combine the first 4 ingredients. Toss with salt, pepper and olive oil in a large zip lock bag. Spread on baking sheet and roast for about 20 minutes. Remove from oven. In a large saucepan saute garlic with roasted vegetables for about 2 minutes; add marinara sauce. Cook an additional 2 minutes. Add fresh herbs and cook for 1 minute. Toss with cooked pasta. Top with grated Parmesan cheese. Additional marinara sauce may be added for more flavor.
