Ground Cinnamon in the Korintje "A" grade, or the Cassia grade, has an oil content of about 3%. Cassia cinnamon has a more intense flavor and aroma, and is the main cinnamon most are used to in the US. Ground Cinnamon is a very versatile spice, used in many varieties of dishes.
