Ground Cinnamon in the Korintje "A" grade, or the Cassia grade cinnamon, has an oil content of about 3%. Cassia cinnamon has a more intense flavor and aroma, and is the main cinnamon most are used to in the US. Ground Cinnamon is a very versatile spice, used in many varieties of dishes. Ground Cinnamon is most popular is sweet dishes, but is also an ingredient in curry powder. It has been reported that cassia cinnamon may help lower blood pressure.
