Baked Eggs Provencal
Ingredients:
- 1 tablespoon Olive Oil
- 1 tablespoon Butter or margarine
- 6 Eggs
- 2 ounce Gruyere cheese, coarsely grated
- 2 Green onions, chopped
- 1/2 teaspoon Tarragon
- 1/4 teaspoon Sea Salt
- 1/4 teaspoon Black pepper
- 2 Medium sized tomatoes, sliced
Directions:
Preheat oven to 400 degrees. In a shallow 8" square baking dish,place oil and butter. Place dish in oven to melt butter. In a large bowl, beat eggs lightly; stir in grated cheese, chopped onion, dried tarragon, salt and pepper. Remove dish from oven; stir to coat evenly in oil mixture. Pour egg mixture and place tomato slices on top evenly. Bake until eggs are just set, around 15 minutes and serve.
